Red Velvet...

...cake, yummy - sandwiched with seasonal fresh strawberries and cream cheese frosting! Can't tell you how many strawberries dipped in dark chocolate it took me to find just the perfect ones for the top x

Sad Spuds...

I always seem to go through a bag of spuds in the same way with 2 or 3 left looking sad and lonely, too small for jackets, too knobbly for me to be bothered to peel and boil and generally we're all potatoed out by this point.

So my solution.... Cheesy Tuna and Potato Bake (perfect for Toddlers and Adults alike)


Last few sad spuds
Pot of Creme Fraiche
Tin of Tuna
Tin of Sweetcorn
Cheese (grated and as much as you want)

  • Using a mandolin slice your potatos up and plonk in dish (nuke in microwave with a little water for 10 mins to make sure nice and soft when baked)
  • Drain and tip in Tuna and Sweetcorn
  • Add all of Creme Fraiche
  • Grate some cheese and add about half to dish
  • Stir this all up
  • Top with more grated cheese
  • Bake for 30-40 mins at 180 (fan) or equivalent.

First Feed...

So it's not quite a week on but my cakes need their first feed of brandy to keep them nice and moist. I don't measure an amount to use metrically but I do normally give them a capful each every few days until I have half a 35cl bottle left. I also fee from the top as I decorate my cakes upside down (the base being flatter and more uniform than the top (I also hate to cut off the tops to level them up as I'm not very good at it and end up re-trimming until there's almost no cake left!).

Wow what a smell again x

So it's done - Faell my personally designed scarf and pattern are complete and ready to be posted for the knitting competition, I can't tell you how good it is to see the package waiting to go. The pattern won't be available like my others until later on, I hope you don't mind bearing with me until the comp is announced.

Pink pow...

Hope this isn't too bright for you!
DH gave me these and some chocs for spending a day at work, my maternity leave is nearing the end and I want to go back on a part time basis. Last time I returned I had to go back... full time, drop 4 grades or lose my job altogether and it was an incredibly stressful point in all our lives as I was dealt with poorly. I'm a pretty strong person but I was forced into leaving my son with other people (people I love) when we couldn't afford to lose my wage completely. The company had just received family friendly company of the year and I was left hanging on for an answer to my p/t request until a fortnight before my return - it was a lot to take and I confess that at the time I crumbled.

I did go back full time and it was a blessing in disguise as I found myself a superb secondment that can only be described as CV enhancing and we planned our second baby to follow swiftly to take advantage of a full time wage maternity leave, hoping that the business would change enough in my absence to open up some part time opportunities.

Phew that was a cathartic release of explanation - I've not read it back as it still has the power to upset me so apologies for my rambling.

Cake Update...

Tis the season again and I can state that my home positively 'reeks' of brandy and spices in preparation for the great christmas bake. The fruit has been soaking for a week and after 3 hours of baking my cakes (only 2 this year I set myself a limit after the madness of last) I can breathe easily and with much relief.

Don't know if you've tried it before but a little tip if you haven't got any newspaper to wrap around your cakes whilst they're cooking. Roll up a long teatowel/cut up an old bath towel to the depth of your cake tin (you may have to roll from opposite diagonal corners to get the length, soak it in water and tie it around the cake, this helps keep the heat in the oven moist and prevents burning around the sides of the tin much better than newspaper - In my opinion anyway. I have an electric fan oven - couldn't say how well or wise this may be in a gas or oil based cooker.

Huwbert Hoot...

With much thanks to Kandi for the most lovely autumnal yarn in my recent swap package I whipped up Huwbert Hoot, a little idea I had been sitting on for a while but didn't really have the stash to match my ambition!

He takes very little time thanks to the super chunky wool yarn and is already a big hit with both my boys - one who now warns me every time he comes near with the tinkle of the bell in his tummy and the other who twit twoos each time he walks by!
